The 1950s-1980s: "1st Wave" Coffee

In the post-war era, coffee in America experienced what we now call the "1st wave." It was a time when convenience took center stage. Coffee was primarily seen as a commodity, packaged in cans, and often left to simmer on stovetops. The focus was on providing an affordable, accessible cup of joe.

Instant coffee gained immense popularity during this period, and household names like Folgers and Maxwell House emerged as coffee giants. Coffee shops were a rarity, and the emphasis was on quantity over quality.

The 1990s: "2nd Wave" Coffee

Enter the '90s, and the coffee scene experienced a seismic shift. This era brought about the "2nd wave" of coffee, characterized by the rise of specialty coffee shops like Starbucks. The focus shifted from convenience to the coffee's quality and the experience of enjoying it.

Espresso-based drinks, lattes, and cappuccinos became a part of our daily lives. Coffee shops transformed into cozy, inviting spaces where people gathered to savor a cup of well-crafted coffee. This era marked the beginning of coffee culture as we know it today.

The Present Day: "Third Wave" and Specialty Coffee

Fast forward to the present, and we find ourselves in the "third wave" of coffee. This movement, which began in the early 2000s, is all about celebrating the unique flavors of coffee beans. It places immense importance on the origin of the coffee, the relationship with farmers, and meticulous brewing techniques.

One of the key figures in this movement is George Howell, who played a pivotal role in reshaping our perception of coffee. He championed the idea of sourcing exceptional beans, roasting them to highlight their inherent flavors, and respecting the farmers' hard work. His influence can be seen in the growth of specialty coffee and the rise of artisanal roasters and cafes worldwide.

Today, we enjoy a diverse array of coffee options, from single-origin pour-overs to cold brews and rare varietals. Coffee has become an art form, and each cup tells a story of craftsmanship and dedication.
